Twilight 5k

Last Thursday my sister in-law, Katey, and I did the Twilight 5k! It was her first time running a 5k. It was a fun run to do. Not too many people, but enough that you were around people the whole time. I'm not a beer drinker, but at the end they had free Twilight Deschutes Brewery beer for the runners.

Menu Plan Monday night


It's actually Monday and I'm posting my plan (even though the goal is to post Sunday night, I don't care though, as long as I get it planned).

Tues: Chicken artichoke casserole from Quick Meal Solutions book (we still haven't gotten to this)


Thurs: Pizza

Fri: leftovers

Sat: leftovers

Sun: TBA

Mon: T-bone steak & potatoes

Tues: BBQ Chicken & salad

Wed: Cowboy calzone (from Pioneer Woman Cookbook)

Thurs: Frozen Chicken Tetrazini (from Once a Month Cooking)

I requested a bunch of Make-ahead-cookbooks from the library last night. I want to do more freezer meals and make the night before meals. So I can make them when I have the time or at least try.

I'm a triathlete now!

I finished my first triathlon yesterday!

I decided to do one 4 weeks early. Three other friends were doing this one and no friends were doing the one I was planning on. So I wasn't quite as ready as I'd like to be, but I'm sure I probably would have felt the same way in 4 weeks and it wouldn't have been as much fun.

I estimated I'd finish in 1 hour and 45 mins. I guessed pretty good because I actually finished in 1 hour 41 mins! If I train for it again next year, I should be able to beat that time. I'm happy I did it, it was a lot of fun.


Here I am at the transition from swimming to biking. It took me 1:51 mins in that transition. I had a little trouble putting on my shirt and bike vest. ....but safety first! I was probably the only one wearing a reflective bike vest, but the bike was on an open course, meaning there were cars on the road.

Jackson was playing in his room by himself for a little bit. I went and looked in and he was looking at his picture book I made him. Super cute to see him laying on the floor like that.


When I walked in he sat up and showed me the pictures.

Took these the other night after doing the yard work. Jackson was making funny faces for me too.






Every once in awhile he does this funny walk. I call it his old man walk. He knows it's funny to do because we always laugh at him when he does it.

Menu Plan last Wed


Forgot to post this on Wed. I just put the Macaroni & Cheese in the oven. Kept some aside for Jackson to eat just now and he chowed it down!

Wed: Salmon, potatoes & carrots

Thurs: Freezer sausage & rice (from Once a Month Cookbook)I think I've said it before, but this is one of my favs, especially since it freezes well.

Fri: Mac n cheese (we didn't get to it last week)

Sat: Birthday party at a friends house

Sun: Tortilla Chip Pie (found in Kiwi magazine Feb/March 2010)
